The Portuguese Kale Broth is a cabbage soup, typical of the North of Portugal. It is a medium thick green soup, as the cabbage is cut into very thin strips.
In September 2011, it was elected one of the “7 Wonders of Portugal’s Gastronomy”. Due to its simplicity and lightness, it is eaten as a starter or as a late supper. For a genuine tasting, this soup is always served in clay bowls, accompanied by corn bread, rye bread or Avintes bread and several slices of smoked sausage “salpicão” or paprika chorizo, which are added to the kale.
